Brewed in Barrels Older Than the Company
Made by Chiba Shoyu (ちば醤油) in Chiba Prefecture, Shimousa takes its name from the old province the brewery has worked in for generations. It is fermented in kioke — cedar barrels well over a century old, whose staves hold the resident yeasts and bacteria that give the sauce its character. Fewer than one percent of Japan's soy sauce is still made this way.
